the next morning....she already replied me !!! and she said to ask me to come down at 1!!! and thats not the best part....she said that she would let me follow her and Astoria ( her chef ) to the MIELE GUIDE DINNER AT FULLERTON HOTEL :)
this few days ....fri and sat i was at 2 am dessert bar from 1- 5 doing all the prep work. Even its just basic prep work, i already was like real excited because it really gave me the chance to be part of the team and seeing all the pieces. Chef J says that everything has to be precise and in a weird way i really like it because i measure and cut everything to sze using a metal rule :).....reall shows how much pride they take in doing their work. thumbs up!!! i cant wait to post pictures on it .
OH yah!!! i have been working at the sinfgapore Cricket Club for the F1!!! and the pass is freaking big big big!!!!!

Today SQ did not come to work and angeline was late for work. Sometimes i cannot believe the irony that Angeline can be late for work but when SQ is late for work, she makes hella noise. i wonder whatsup with her. Today i just ignore Angeline and Pei Pei. Don't see a point in talking to them and then they start gossiping and stuff. Just ignore and do whats required in the kitchen
Today Uncle poh made briyani but somehow or rather i think its becaure the rice was not suitable or what, it kinda lost the look that the briyani was supposed to have. We used Japanese pearl rice instead of Basmati rice. wrong move i guess. OH YA!! i learn a new dish from Richard.....Panko Renkon Sandwich w/ Tonkatsu Sauce.

Currently reading the book, "Unhurried thoughts in my Funerel" by Catherine Lim.
That book is really really deep....talks about how a person things on the death bed and in death but most importantly, the presence and the different perspective of god and how that notion has evolved has the world revolutionised. That book keeps me company both rom work and to work.

ANyway ystdy was hari raya. Due to work i was not able to accompany my mum and dad to my aunts place for lunch...was in hanabi. Eating sashimi :)....yesterday duck went out with his fellow officers...Hanabi also saw a group of like army guys that really got the girls swooning.....
i could only think of duck.Ah poh burnt his hand ystdy. it was bad...the skin literally peeled n stuff....was freaky n he also applied mayo on it.

Today....well alot of things went on in Hanabi. Mike came over from Ben Ten and joined us.He is now trianing in the sashimi counter. i am sure he would enjoy his stint with alex... There was like a back-talking btw angeline and pei pei. I mean we are all colleagues why do they have to talk behind?? why cant they just come up to me n SQ face and talk. I thought we settled that last time. It really sucks that they are playing internal politics. If two of them really feel that wokring in hanabi is that bad, maybe they should find another place to work and stop all the bullshit that they are doing. Thats the reason why i decided to go to RCIA alone and not with angeline. I dun like the way she talks behind and stabs, so i decided to just go alone. No point pretending and be a stupid two face when i dun like someone and be all nice to her. I keep my distance from her and talk only when needed. Thats to prevent any trouble. gosh........
Today i spotted chef Raymond doing somthing really interesting. He grineded the Peh Leng in a paste and then added miso. He told me that the logic behind that was to give the miso soup a little more color when he cooked it. hmm interesting.
thats how it looks like when it was in a paste form. I tried it...its not bad. I keep tasting and tasting this days. :) haha...i realise that our tongue is really a very very important part of our senses. its able to decipher many different layers of texture and favour in our food.
i am enjoyig my life in the kitchen. Every single day,,,,and i mean EVERY single day, there is always something to learn and something new. Its never boring and even after work, i still keep thinking about cooking and food. I currently reading a book about jap cuisine. Interesting.....gonna take a nap vefore reading more!!!!

going for personal RCIA with father gerald on wed and driving. working and reading up. filled with stuff ..filled with thoughts.
turning 22 this year was pivotal. I realize that i dunno myself at all. i have done many stupid things and many stupid things have happened in my life. things that i have thought would never happen. Yes many may doubt and think that what a drama queen or that "here she goes again...." but there are just certain things that one don't lie about. went thru sessions with the med social worker. It was hard admiting the so many mistakes and so many actions that i have done. but if i dont, how the hell am i gonna change and improve. i am working on it now. i dunno what happen along this few months, maybe i chose to distance or they chose to distance but i am not gonna play the blame game. I am blaming myself and working on myself and trying to step outta it.
am i scared?? yes i am. i am very. no doubt about it. when i am alone i get flashbacks. i get overwhelm. what i do??? cry....cry and feel better. cry for the bad stuff i did and cry for that ONE bad stuff that happened to me. can so many emotions be kept in one place??? maybe...maybe not. i am not sure.
i just hope to change internally.....heal internally...improve internally before i go out and interact again. This alone time to write, talk it out and reflect, its gonna be long but it has to be worthwhile. the future cant go on like that.
A PEEK INTO MY NEXT DESIGN.......PEONY DESIGNED FONDANT CUPCAKE
I remembered last time i was really into drawing flowers....and i managed to sieve out this drawing that i did and half coloured last time. and thought, hmmm why not turned it into a fondant design :)
well here is the sketch....i am gonna rescale it today so that it becomes smaller to fit in a cup cake ...or maybe i might put it to scale on a round cake :)

and i am seriously telling you...candy melts are so not the things that you wanna work with. it has a really tricky timing to work with. i thought it would be easy but how wrong i was man. , its not that easy. getting the texture right nearly killed me .... and i considered this time a failed attempt. i am gonna go to BIY to asked how to used the candy melts properly tomorrow during my break during split shift.
anyway here are the pictures from my attempt today :)

anyway, the first step was to bake the cake
i use betty crocker pre made cake mix :)
After that wait for the cake to cool n crumble the cake.
( thats cake crumbles with frosting)
after that its the shaping for the cake pops
shape them into a ball.....and then....candy melts stuff~~~~
the melting of the candy melts. trust me....cake melts are so not like your baking chocolate.....
i need more time to experiment!!

And was talking to loke about school and stuff. uncle was in a good mood today.
after work, talking to my colleagues and also went to eat steam dumplings at this chinese roadside shop. no wonder i am not losing weight haha....surrounded by food and more food. how to.

was not really busy during lunch but the night was abit hetic. Uncle cooked the black bean paste base.
basically everyday right now for me is like work and work. tml is to the hos for stuff.....but thats during my break. so i am working on my birthday. well i guess for the coming years i would be working and preping stuff in the kitchen. For festive seasons and stuff but, i feel happy doing that. everyday i am learnng new stuff in the kitchen....like how to make base sauces,chawamushi and most importantly practising my knife skills as well.
Once school start ( i received a call from ryan stating that school is gonna start on the 5th of october) awesome.....:) then i would be posted to the hotels. and it all starts from there :) .......i guess.
i have been looking up alot on cupcakes webbie and i am trying the candy pop. :) really dammm cute. haha...tats how i spend my time i guess...on off days.
right now....i am trying to work on all the bad points on myself. doing reflection everyday. looking to the counselling and stuff. i do have a problem i do i guess.
well still trying hard.

you have to like be ther to actually experience the dining and the ambience. its like you are near a seaside...and everything. i tell you, coupled with the food and stuff, my brothers and me had a really hearty meal....and the food ..one word : AWESOME... here is what we ordered....

( one of the best ceaser salad that i ever ate...its like every leaf is coveres with ample sauce and the prawn grilled to perfection)

haha basically actually all he had was that long taiwanese boyband look and the best part!!!! he has those kinda single eye lid slit eyes and he is slim and slender and YES he is straight hahaha...ok maybe to others he might not be good looking at all but to me he is !!! haha basically cos i have a thing for guys with that knda eyes.

- i really am like dying to go...but its only on tuesday evening or wed morning then the guy from Sunrice would be telling me the duration and the break in the course but i know the april course last for two months , so june is the break till october. but the confirmation comes out on wed..so ya. haha but my mum already told me what to get for her ( the thick cut kinda aussie potato chips and stuff....) and i already thought about what back pack to bring already...my bro gonna get for me the army field pack. haha i tell u its dammm durable...i am almost like 70% prepared

actually i haven really like spoke and stuff to a celebrity but in the course of work at dragonfly, i have met Terrence Cao, Patricia Mok and Chen Han Wei. Well nothing really big. To me they are just human like us ... i am not the crazy fan kinda person where by i will shout and scream...nah none of this hulla ballu. crazy.

so met jo and lee at Far East. Recommended Primitive Art because my cousin used to work down there and it looks like it could be trusted. haha and we contemplated over lunch....well she decided to do it!!!...
and 3 of us acted like jo was giving birth..holding hands all in the piercing room. and after the lady pierce she said " Congratulations, its a baby boy!!!" hahahaha i died laughing....so well here is the product......and we did manucure as well!!!!random......
